Choc Mint Mug Cakes- Microwaved

These quick and easy single portion mug cakes are great for cooler seasons. They only take a few minutes to prepare, 2 mins in the microwave and boom you have yourself some warm comfort food.

What you need…   Makes one mug cake
  • 1 egg white
  • 2 tablespoons spreadable butter
  • 3 tablespoons caster sugar
  • 2 tablespoons plain flour
  • 2 tablespoons cocoa power
  • 1/4 teaspoon peppermint flavouring  
  • 1/4 teaspoon vanilla 
  • 2 tablespoons milk (1 for the batter, 1 for when it is cooked)
  • Small handful of rough cut choc pieces, or choc chips
How you do it… 
  • In your chosen mug and using a fork beat the egg white, butter and caster sugar


  • once mixed add the flour, cocoa, peppermint and vanilla, mix well

  • Add 1 tablespoon of  milk and chocolate pieces, mix well again

  • Put in the microwave and cook for 2 minutes

  • Pull it out of the microwave and pour the remaining milk over the top.  Cooking in the microwave can cause the cake to dry it out, so by pouring some milk over the top and letting it soaks in you'll have a nice moist cake.  Throw some extra chocolate on while it's hot so it melts, sprinkle with icing sugar and dollop some ice-cream on top!
