Heavenly Lemon Pudding



I found this heavenly winter pudding today in new issue of 'Super Food Ideas', a food mag I get every month, and it was just too good not to share with you all. You can find the recipe on page 47 of the June 2014 issue, or right here!

It was super easy to make, I didn't even need turn the oven on as it's 'baked' in the microwave and it only took 10 minutes whip together.

What you need…

  • 1 cup of self-raising flour
  • 3/4 cup of caster sugar
  • 75 grams melted and cooled butter (I used Nuttelex)
  • 1/2 cup of milk (I used lactose free)
  • 1 Egg, lightly beaten
  • 1 tablespoon lemon zest
  • 1/3 cup lemon juice
  • 1/2 cup boiling water
  • icing sugar to serve.
How you do it… 

  • Pull out a microwave proof deep baking dish and grease it.
  • In a medium bowl mix together the self raising flour and 1/2 a cup of the caster sugar
  • Make a well in the dry ingredients and pour in the butter, milk, egg, zest and 1/4 cup of the lemon juice
  • Use a whisk to combine it all together.
  • Spoon the mixture into the dish, smooth the top.
  • Combine the boiling water and the both the left over caster sugar and lemon juice in a jug, carefully pour over the back of a large metal spoon covering all the batter.
  • Place the baking dish in the microwave on an upturned dinner plate.  Microwave uncovered on high for 7 minutes.
  • Once out of the microwave dust with some icing sugar, and dish it out.











I love lemon pudding on its own, but it would be divine with some cream or better yet some ice-cream.
