Pancakes, never buy pancake mix again!!


Full credit for these yummy pancakes goes to Nigella Lawson as they have come straight out of her 'Express' cookbook.  The idea is basic but also genius, you make up and store the base mixture in your pantry and then just add the wet ingredients when your heart desires some pancakes, which in our case is most sunday mornings.  This morning I had to make up a new batch of fabulous ready to go pancake mix so i thought i would share it.

What you need…

  • 600 grams plain flour 
  • 3 tablespoons baking powder
  • 2 teaspoons bi-carb soda
  • 1 teaspoon salt
  • 40 gram caster sugar
Mix it all together and store in a airtight container in the pantry.
Making the pancakes
What you need…

  • 150 grams of your pancake mix
  • 1 egg
  • 1 cup of milk
  • butter for frying.
* For a egg free option replace the egg with half a mashed banana.
How you do it…

  • once you have measured out the pancake mix in a large bowl add the egg and milk.
  • Whisk it together so it is nice and aerated.
  • heat up a frying pan on a medium heat, you don't want it to get too hot.
  • Melt some butter in the frying pan to the bottom is covered.
  • Use a 1/4 cup measuring cup to pour some batter into the pan.
  • When cooking look out for the pancake to start to forming bubbles,  flip it over and continue to cook for a minute.


I like to smother my pancakes in maple syrup, but they are delicious with any of your favourite pancake toppings!
