I hadn't made this cake before, but decided to give it a go as I liked that its not your conventional 'cream the butter and sugar together add flour' kind of cake.
Here's how it went............
What you need...
- 2 cups of water
- 3 cups caster sugar
- 250g butter
- 1/3 cup cocoa powder
- 1 teaspoon bicarb soda
- 3 cups self raising flour
- 4 eggs
- Preheat oven to 160 degrees for fan forced, and grease a large rectangle baking tray.
- Place the water, sugar, butter, sifted cocoa and bicarb in a saucepan and heat without boiling. Once butter and sugar is dissolved let simmer for 5 mins. Carefully transfer the glossy mix into your mixmaster bowl and pop into the fridge to cool down.
- Once the mixture cools, sift in the 3 cups of self raising flour and add the 4 eggs, beat until it's pale. I found that the mix was still quite runny and reminded me of a thick hot chocolate drink...YUM!
- Pour into a large rectangle baking tray, and pop into the oven, for 45-50 mins.
- Out of the oven and onto a cooling rack...it smells divine!
What you need… Fudge Frosting
How you do it...
- Stir butter, caster sugar and water in a small saucepan over heat.
- once sugar is dissolved, add sifted icing sugar and cocoa (make sure its sifted as it will otherwise be lumpy!!!)
- cool mixture in the fridge for a good 20 mins or so.
- It will now be nice and thick. Beat the frosting so it pale and spread over the cake.
Wow, I did not realise just how much cake I was making, it truly was a slab of chocolate cake. I think it would be perfect for a party, as it would defiantly go a long way. It has a nice chocolate taste without being overly rich, stayed nice and moist and the icing was to die for! So all in all I think this 'Family Chocolate Cake' is a winner and was just lush. Will be making this one again!
