Banana & Nutella Muffins


Last week Miss 3 surprised me and and while on our flight home from Perth and ate a banana! To some this doesn't seem like a big feat but both of my girls aren't fans of bananas at all, and I can't eat bananas that have not been heater though.  So it is fair to say that we never have them in our house, this is why is was so surprising that while at the supermarket Miss 3 asked if we could buy some.  I picked up 3 as I knew that we wouldn't need many, and I was right, the next day she had one bite of one and bam "mum I don't like banana again".  So here I was with 2 ripe bananas and no one who would eat them in there natural state.  So what to do??? Banana muffin of course, add some Nutella and hey presto yummy snacks!

What you need...

  • 125 grams Butter
  • 3/4 cup Caster Sugar
  • 1 teaspoon of Vanilla Paste
  • 1 Egg
  • 2 mashed up ripe Bananas
  • 1 1/2 cups Self Raising flour
  • 1/4 cup of Milk
  • Nutella

How you do it…

  • Pre heat you oven to 170 degrees
  • In your mixer cream the butter, caster sugar and vanilla until light and fluffy
  • Add in the egg and beat
  • Add the self raising flour and mix with a wooden spoon
  • Now add in the mashed banana and mix well
  • Scoop a large dessert spoon full into your prepared muffin tin or muffin cases. 
  • With a small teaspoon place a dollop of Nutella on top of each muffin and with a skewer give them a swirl.
  • Bake for roughly 15 minutes or until cooked through.
Now just try and resist eating these warm and straight out of the oven.
