Chocolate Cake


This is a little piece of chocolate cake heaven, a blessing that I got through a very clever fellow mum from one of my fantastical online mums groups.  This smarty pants mum not only have given me the gift of a great go to choccy cake but also a fantastic vanilla cake which I will get to soon, but for now, here is the 'Chocolate Cake of Awesome'






What you need…

  • 1/2 a cup of butter or nuttelex of a dairy free option 
  • 1 1/2 cups of caster sugar
  • 2 eggs
  • 2 or 3 tsp vanilla, coffee or liqueur, or a combination.
  • 1 1/2 cups milk, or coconut milk of the dairy free option
  • 2 cups of plain flour
  • 2/3 cup of cocoa
  • 1 1/2 tsp baking soda
  • 1 tsp salt
How you do it...

  • Pre heat you oven to 180
  • Cream your butter option and sugar together
  • Beat in your eggs, milk option, vanilla/coffee
  • Follow this by adding in all of your dry ingredients.  
  • Let it beat all together for a few minutes until it is look light and smooth and delicious.
This is recipe makes quite a lot of batter, so you can get 2 x 20cm round cakes out of it, or 24 cupcakes, or a 20cm x 30xm slab cake or like I did a 10 inch deep round cake.

  • pour the batter into your tin and bake.  Cupcakes will take roughly 18 mins, my big cake took just on an hour. 
I like to double choc this cake up by icing it with a chocolate ganache or a chocolate butter cream.  Chocolate butter frosting is what is pictured.
To make a chocolate butter cream I use:
125grams of butter or nettle 1 1/2 cups of icing sugar and 1/2 a cup of cocoa powder.
Beat the butter for a good 5 mins, then slowly adding in the icing sugar and cocoa, continue beating it for a good 10 mins.

I can guarantee that you wont get any complaints with this cake!
