1 2 3 4 Vanilla Cake


I have recently learnt about the very versatile 1234 cake, that gets its name because of it's amounts of main ingredients.  It is not only a fantastic basic vanilla cake, but you can add all sorts of favours to it to jazz it up. Today I think we will just talk about the vanilla version as its a good base to start, there is always room for fancy flavour blogs later on!

What you need...
  • 1 Cup of Butter
  • 2 Cups of Caster Sugar
  • 3 Cups of Plain Flour
  • 4 Eggs (get the 1234 now??)
  • 1 tsp salt
  • 2 tsp vanilla paste
  • 3 tsp baking powder
  • 4 x 75 ml liquid, you could do 300mls of milk, or 2 parts milk 2 parts liquor, your coconut milk, so on.  Just so it adds up to 300 mls
How you do it...
  • Pre heat you oven to 180 degrees 
  • Cream the butter sugar together
  • Add eggs and vanilla, beat together well
  • then add in all other ingredients, and beat well until light and smooth.
  • Bake 
This recipe give you a decent amount of batter, so it will easily make you 24 cupcakes, or 2 x 8 inch cake tins, a big lamington tin cake or a nice big 10 inch round cake.  The time the cake/s will take to cook will depend on what you have chosen to bake them in, cupcakes will take about 15 mins, a large tin may take up to an hour. just keep and eye on it and enjoy.
